Alright, here are some thoughts I have!
Qotia Kingdom;
Pulling from some basic research on all the countries you provided, a major element of the Qotia Kingdom should probably involve music and dance, personally, I like the idea of a large festival (or multiple) that's held annually to really emphasize this. We're talking big colors, loud music, lots of dancing, lots of food (get to that in a sec), and lots of alcohol, probably all tied up in a few days with the night life of it all (probably starting mid-day and going into night) being the big focus. And can't forget those religious undertones (also mention that in a sec, lol)! I'm pulling a lot from the spanish festival Feria de Sevilla in the color and atmosphere side if you're interested in any of that.
For food, the similarties I found were in bread, cheese, and lots and lots of herbs and veggies. A lot of big flavors, especially pulling from Portugal, Hungary, and Greece. Lamb is a common protien among all these cultures as well and things like fish and other seafood. Plus, again, alcohol. Especially wine. With literally everything, lmao
Probably the biggest thing I found though, was a heavy emphasis on family. A lot of it was further exagerrated by religion, which I think could be a cool thing to implement. Big, very close families. Basically in every culture you mentioned there's kinda a "Family over everything else" vide, so that might be something that could be cool to add and also potentially create some good angst :)
Oh, also, hard-work is heavily valued in most of them.
Alright, now for religion! So, the deities you mentioned I noticed that a large majority were based in nature, plus the deities of life and death, so I think it could be cool to do something with that. A kind of "respect nature and it'll respect you" mindset maybe? With a lot of the work being around farming and otherwise outside labor, plus metalworking since you mentioned Ignarion as well.
For schooling, I'm basing a lot on Greece, Roman, and Spanish systems (especially ancient greek and roman interest) since a lot of the other places don't have great schooling systems with more emphasis on hard labor and you mentioned Sophia as goddess and all. Perhaps a large emphasis on science, especially natural sciences to go along with the worshiping of nature. Astronomy as well. Probably also some math and language as well, with education being a large part of childhood and kinda required for everyone?
Nysa Empire
For the Nysa Empire I'm honestly thinking a much more serious culture (is this partially because I read through some Roman Empire history first and am also just generally more aware of that history than the others, along with some Iranian history, probably-). I still think music at least is probably a decant thing to say is important, especially considering Cadenza is also one of their deities, but I feel like maybe there's more interest in things like going to the opra or to watch a play rather than big social gatherings outside of the family. Still alcohol though, though maybe not quite as much, lol
For food, things like spices are probably still important, along with herbs. Lots of bread, cheese, and various protiens, probably a little more spice than Qotia. Pulling from Mexico and Italy, the later meal may be more lengthy and regarded as social time along with meal time.
Again, I found a heavy emphasis on family and even more on religion, but also a bigger trend of more traditional families. In a lot of these cultures (save Australia and certain parts of Mexico), women raise kids and housekeep, they're expected to wear covering clothes, and often remain relatively uneducated while the men work. Family is important but often very structured and somewhat political, and especially in places like Iran and India, arranged marriages are still fairly common. I think this could be fun to impliment, making Nysa less progressive in general.
There's also a lot larger (or, rather, more visible) gap between the rich and poor with the poor being less educated and doing more labor while the rich are more educated and get better jobs and luxury.
Hard-work is still highly valued in basically every place, but there's also an emphasis on good education. I feel like emphasis on language and literature might suit Nysa well, plus probably higher math as well. Maybe education is really pushed and is something everyone strives for, but the poorer and the women/otherwise "lesser" people have to work harder to actually get it?
Also, I feel like law could be a big thing of interest, with people who enforce it being given the highest respect?
For religion! I feel like it's a good root for Nysa, maybe the cause of some controversy and mistrust of those who don't believe in the same deities as the general population. Maybe it's even pushed upon people somehow, especially worship of Horatius, Tutti, Nwyvre, and (if you go with the law idea-) Sancta.
