My recommendation would be to pick one or two things that you care for more than other things, and focus on that. It's difficult to breed for too many things, especially as you are starting out.
You can also try posting in the forum to see if you can find breeding partners that also want to focus on the same things as you ^^

Some people breed howlers & wrestlers for FMC (I think it is 5th-9th each month?), but I don't think those have any use outside of that if I remember correctly

It depends entirely on what you want to breed for. Rarity is only a pelt thing, but tends to be popular for their looks. Talents means your pups will start out with more CP, which is good if you're breeding battle wolves/ explore a lot. Many people love defects too though

What does the "(U)" and "(B)" of the Ptarmigan Feathers mean? And, are there more types?

(U) means it's unburied, (B) means it's buried.
If you mean by types of ptarmigan feather, I don't think so
