What helped me is actually looking at the skeletal and muscular build up of a horse. Mainly, though, I just practiced a lot.

I went through a lot of phases. Try drawing their skeletons and draw bodies around them. Practice drawing different parts of horses before making full bodies. For me I try to get a proper outline, following the contours of the body. Their heads aren't ovals. They've got the muzzle and cheekbone pushing out at the bottom. Study the hooves and legs too. I've made so many drawings that were ruined because I made bad hooves. I actually didn't learn by looking at muscles on pictures. But then again, I get lots of practice trying to draw my horse. And even though people say tracing is cheating try tracing some photos or trying to replicate them without tracing. Wow, sorry this is so long. Oh, and cutting the horse into ovals and rectangles and such never works. At least not for me.
