If you're looking for a really easy plant to grow that also has all the associations with fae and witchcraft I can recommend blackberries/brambles. I don't know how common they are in the US, but they grow absolutely anywhere in the UK and are unbelievably tough.

I have an ancient blackberry bush in my garden. It's so old I don't know if it even flowers anymore lmao

There's a whole bunch of them in front of my grandmother's house. I used to pick the blackberries every summer when they were ripe. Their really nice to have.

I'd say it's worth looking into. I've only had a quick look at them, but they seem to have some useful properties.
They're one of my favourite plants simply due to how hardy they are. Not only can they fruit and flower at the same time, they can be made into fences, baskets,, anything. It's just such a versatile plant and I'm a fan. :>
