Their eyes dont change, but they do foam out the mouth. They're hyper-active and twitchy when they dont have stuff to chase, so if you see a figure thats not still, its likely a zombie. I would think in the beginning it would just be behavioral things, and maybe like slightly redder eyes? after a while though, it would probably be more apparent.
